I may just be the best chef ever. EVER.

Because I just created the best salad known to man. I wish I would have taken pictures of the beauty that was this salad; but it didn't occur to me to until it was sort of all eaten and gross looking (you know how salads always end up toward the end).

I have been trying to be more conscious of the food that goes in my body over the last month or so. As you may know, I am attempting to become a machine; and this body needs some serious fuel to make it work. And I just love how much better I feel after a day of yummy nutritious stuff goes in. Don't get me wrong- there are still plenty of skittles and candy hot tomales involved in my life- but eating the good stuff too makes it okay! I can hardly handle cooked vegetables, but I love me some crunchy green leaves so I have been trying to come up with some ways to be creative with them. For lunch, I ate a huge spinach salad and topped it with tuna, pickles two crushed whole wheat crackers, chia seeds and some fat free Italian- I must say that it was pretty tasty for a lunchtime meal.

And tonight. Oh tonight. I don't think I will ever want to eat anything ever again except for this fajita salad. Let me share.

Seasoned some eye of round strips in fajita seasoning and cooked thru. I would have put bell peppers and maybe some yellow and red peppers too but I knew eric would be eating fajitas and he can't eat them. Anyway, I made a gigantic salad of mixed leaves and carrots, put some rinsed black beans, chick peas, reduced fat cheese (but just a tiny bit i promise!), chia seed sprinkles, and bunches of cherry tomatoes. Topped it with the meat and a smidge of fat free sour cream. And then I mixed about a tablespoon of fat free ranch with a tablespoon of salsa and put on top of salad.

It's not fancy- but it was GOOD! And easy. And all sorts of good- did I say that already?

Nom nom nom. I love me a good salad. Try spinach leaves with golden raisins, toasted pecans and goat cheese with balsamic or a home made olive oil based dressing.
